One of my favorite things on a salsa bar in a Mexican restaurant is the escabeche, if they have it of course. Crisp crunchy vegetables, tangy vinegar and seasonings. You can make a batch and store them in the refrigerator for those times you need a little something. Or to accompany your AIP Beef Fajitas!

Over the years I have tried my best to like salmon, but just couldn’t get there. The most palatable way for me was raw in sushi. That is until Chef Ann came up with these recipes. Maybe it was the super fresh Scottish Salmon that Chef Ann used or simply the delicious recipes. Being the culinary trooper that I am I tried each dish, to my surprise I liked them! I think perhaps something within me has changed also, because I have now had salmon a few times and enjoyed it, who knew? My favorites here are the cilantro sauce and the Caribbean, I did try them all and they were delicious!

Ive been noticing meals in a bag in my local markets. Man has cooked food in packages for a long time. Banana leaves, corn husks, parchment paper and foil have all been used to wrap a meal into one package to be cooked together. Here we are offering a meal cooked in a foil packet.

A long time ago one of my favorite tv chef’s said that if you dont like it, eat a tablespoon full of fresh chopped cilantro everyday for a week. By the end of the week you should like it. For some people I guess it has a soapy taste to it, sad. This simple Cilantro Sauce is to die for. Would be good on all kinds of things.

The simple things are often the best which is what you could say about this recipe. A few fresh clean ingredients and you can have this delicious dish on your dinner plate in no time at all. Food doesn’t have to be stale and boring to be good for you!

AIP ITALIAN WEDDING SOUPI really enjoyed this soup when we made it here. I love using the riced cauliflower to replace the Israeli Couscous you would normally find in Italian Wedding soup. Be sure to add the cauliflower at the end, you don’t want it to overcook.
This recipe was a result of our trip to a local Asian market. Simple, fresh ingredients are the highlight here. Very tasty dish the whole family can enjoy.
