AIP Gingerbread Cookie Dough with Vanilla Icing – POTG Test Kitchen

Who ate the gingerbread man? We all did because he is AIP! Now you can make our delicious Gingerbread Cookie Dough at home with your entire family. You can share the classic tale of the gingerbread man with your children as you make them. Perfect for a fun-filled family activity on a cold winters night. Make several batches of the icing and add an AIP approved coloring. The fun part is letting your children decorate and express their creativity.

Note: The icing has a low melting point so the finished cookies will be best held in the refrigerator.

Gingerbread Cookie Dough
  1. 1 1/2 cup plus 2T. cassava flour
  2. 1/4 tsp sea salt
  3. 1/2 tsp baking soda
  4. 2/3 cup non-hydrogenated palm shortening
  5. 1/2 cup maple syrup
  6. 2 T. Molasses
  7. 1 1/4 t. cinnamon
  8. 1 1/4 t. powdered ginger
  9. 1 tbsp vanilla extract
Icing
  1. 1 cup of coconut butter, softened in microwave until creamy
  2. 1 cup coconut cream
  3. 3/4 cup honey
  4. 1 T. vanilla extract
For the Cookies
  1. Beat shortening, maple syrup, molasses, and vanilla in a standard mixer or food processor.
  2. In a separate bowl, whisk together dry ingredients.
  3. Add the dry to the wet and beat until just combined.
  4. Spoon dough into a container with a lid or wrap the dough in plastic wrap and refrigerate for about 3 hours to rest the dough.
  5. When ready to roll and bake the dough, preheat oven to 350 degrees, take the dough out of the refrigerator and let it soften up a bit.
  6. Transfer the dough to a large sheet of parchment paper, use your hands to pat the dough down into a round circle, sprinkle it with flour, and then place another piece of parchment on top of it.
  7. Use a rolling pin to roll out the dough to 1/8 inch thick, then cut into desired shapes, continuing until all of the dough is used.
  8. Put the sheet in the oven and allow the cookies to bake for 5-8 minutes until golden brown on the bottom.
  9. Remove from the oven and allow to cool completely before frosting.
Icing
  1. Mix all ingredients until well combined.
  2. Chill for one hour before icing cookies
